Gluten Free Protein Blueberry Muffins

Gluten Free Blueberry Protein Muffins 🤩 (ps why is there no muffin emoji?)


These are so easy to make and super yummy! 😋

You’ll need:

- 3/4 cup gluten free flour

- 3/4 cup vanilla protein powder

- 1 tsp baking powder

- 1/2 tsp cinnamon

- 1/4 tsp salt

- 1 tsp chia seeds

- 2 tsp melted coconut oil

- 2 tsp maple syrup

- 1 egg

- 1 tsp vanilla extract

- 1/2 cup unsweetened vanilla almond milk

- 1/2 cup fresh blueberries


Preheat your oven to 350 degrees. Combine all dry ingredients in a bowl. In a separate bowl combine all wet ingredients; once mixed combine the two bowls. Pour into a muffin tin and let it bake 20-25 mins or until a toothpick comes out clean when you stick it into the muffin. Makes around 6 muffins. Enjoy ✨
