I got asked to post a recipe for a breakfast idea and I have been wanting to make this for a while! These pancakes are 100% vegan, super easy to make and they are easy to customize! I myself am obsessed with any chocolate & peanut butter combination - it is my weakness! I decided to top my pancakes off with that but feel free to try something else!
Here is what you need to make the pancakes (minus the chocolate unless you plan to go that route):
- 3 Cups of Oats
- 2 Ripe Bananas
- 2 Cups of Almond Milk
THAT IS IT! Crazy right?
To make the pancakes:
Blend the oats into a flour. I used a food processor to get it super fine. When you are done blending them it should almost look like sand. After you have your flour, add the almond milk and bananas and blend them in as well.
From there, heat a non-stick pan on medium and pour a small amount of batter into a small circle. Cook the batter until bubbles appear, and then flip to the other side. Once you have a golden color you are done! Add your toppings and enjoy!
FYI - if you do try the chocolate peanut butter combo that I did make sure you use dark chocolate that has a high cocoa content. Dark chocolate is actually really good for you!
