Vegetarian Jambalaya

I have been wanting to make my own healthy version of jambalaya and this one did not disappoint!

To make this you will need:

- A small crockpot

- 1 package of soy chorizo

- 1 can of black beans

- 2 cups of quinoa or rice

- Half a container of vegetable broth

- 1 large tomato

- 2 stalks of celery

- 1/2 cup of either white or yellow onion

- 2 tsp garlic powder

- 2 tsp chili powder

- Salt & pepper to taste

(Serves 1-3)

Chop up all the vegetables and combine all the ingredients and put everything together in your crockpot.

Set a low heat and let everything mingle and cook together! it should take between 6-8 hours to cook on a low heat and around 2 hours on a high heat.
